This recipe is great for summer dinners when it is too HOT to cook inside. Add in some fresh tortillas or warm tortilla chips to use up all that delicious grill corn salad.
Ingredients:
- 1lb Skirt Steak or Flank Steak
- 1 Tbsp each, Paprika, Brown Sugar
- 1 tsp each Salt, Black Pepper, Chili Powder, Cumin, Chipotle, Granulated Onion and Garlic
- Cooking Spray
- 2 Ears Corn, husked and silk removed
- 1/2 Red Onion, diced
- 1 Large Avocado, diced
- 1/2 Cup Tomatoes, diced
- 2 tsp Honey
- 1/2 Cup Lime Juice
Directions
- Mix together spices and rub into both sides of Steak Spray seasoned meat liberally with cooking oil. Set aside.
- Spray Corn with cooking oil. Over high heat on grill or grill pan lightly char Corn, 3-4 minutes per side.
- On hot grill, sear Steak for 3-4 minutes per side, or until it reaches desired doneness. Remove to plate and allow to rest for 10 minutes.
- Cut kernels off of Corn and mix with Onion, Avocado, Tomatoes, Honey and Lime Juice. Add salt and pepper to taste.
- Thinly slice the meat against the grain and serve with corn salad.
