We’ve all been dying the egg shells for years – but what a waste! Who knew all this time we could have be making these beautiful Rainbow Deviled Eggs instead? Give this recipe a try to brighten up your brunch or appetizer spread – or take them to your next pot-luck!
Ingredients:
- 12 Hard Boiled Eggs, peeled and cut in half
- 1/2 Cup Mayonnaise
- 1 Tbsp Yellow Mustard
- 3 Tbsp Sweet or Dill Mustard
- 1/4 tsp each Salt and Pepper
- Optional – 1/2 tsp Turmeric (for color)
- Gel Food Coloring
Directions
- Scoop the egg yolk into a mixing bowl.
- In bowls or cups, mix 4-5 drops of food coloring in 1 cup of water. Prepare a bowl for each color you are using. Let Egg Whites sit in dye 2-3 minutes or until desired shade is achieved.
- Let colored Egg Whites dry, hole side down on paper towels layered in a cookie sheet.
- Mix Egg Yolks with Mayonnaise, Mustard, Relish, Salt, Pepper and Turmeric if using. You can use a hand mixer for a smoother texture.
- Use a piping bag, or a sturdy zip top bag with a small hole cut in a bottom corner, to fill in the Egg holes with the Yolk mixture.
Optional – Garnish with Chives Bacon Bits, Smoked Paprika or Diced Jalapeños.
