An elevated take on traditional Holiday yams or sweet potatoes, these look so impressive, but are quite simple to make.
Ingredients:
-
6 Medium Sweet Potatoes, skins scrubbed
-
6 Tbsp Butter, melted
-
2 Tbsp Olive Oil
-
1/4 tsp Salt
-
1/2 Cup Brown Sugar, plus more for topping
-
1/2 tsp Cinnamon
-
1/2 Cup Pecans, coarsely chopped
Optional – finish with a drizzle of Maple Syrup for a little extra sweetness
Directions
-
Preheat oven to 425°F.
-
Starting at least 1/2” from the end, make slices 1/4” apart most of the way through each potato. (Use chopsticks placed on either side of the potato to keep from cutting all the trough)
-
Place potatoes on a parchment paper-lined baking sheet.
-
Whisk together Butter, Oil and Spices in a bowl. Brush half of the mixture over all of the potatoes. Spread apart the slices to ensure the sauce gets in-between the pieces.
-
Cover the baking sheet with aluminum foil and bake for 25 minutes. Brush remaining sauce over the potatoes and bake uncovered for an additional 20-25 minutes, or until tender.
-
Once potatoes are cooked through, sprinkle on chopped pecans and drizzle with Maple Syrup (if using) – serve warm.
