A festive take on a classic summer treat! These simple drop shortbreads come together fast making this a fun recipe to whip up for your next summer BBQ.
Ingredients:
- 2 Cups Flour
- 3 Tbsp Sugar
- 1 Tbsp Baking Powder
- 1/2 tsp Salt
- 1/4 Cup Cold Butter, cubed
- 1 Cup Milk
- 1 Pint Strawberries, hulled and quartered
- 1 Pint Blueberries
- 1/4 Cup Sugar
- Whipped Dessert Topping for serving
Directions
- Pre-heat oven to 425° F. Lightly grease a baking sheet.
- Mix together 1/4 cup Sugar, Strawberries and Blueberries. Set aside.
- In a large bowl, combine Flour, remaining Sugar, Baking Powder and Salt. Cut in Butter until mixture resembles coarse crumbs. Gradually stir in Milk until a soft dough forms.
- Drop the dough on prepared baking sheet, making 8 shortcakes. Bake at until lightly browned, 12-15 minutes. Cool on a wire rack.
- Split shortcakes and serve with fruit mixture and Whipped Topping.
